Low Carb Crumbly Keto Chocolate Chip Cookies

Ingredients
  • 120g ground almonds
  • 
1 medium egg
  • 
2 tbsp double cream
  • 
2 tbsp soft butter (unsalted)
  • 
6 smidgens of Sweetia
  • 1 tsp vanilla extract
  • 
45g chocolate (dark works best)
Directions
  • Step 1 Mix Sweetia with egg in a bowl.
  • Step 2 Add in all the ingredients except for the chocolate to create a dough.
  • Step 3 Allow the dough to sit for a few minutes, and taste for sweetness.
  • Step 4 Break up the chocolate and add to the dough mixture
  • Step 5 Create small round balls, and then flatten on a baking sheet lined with baking paper, ideally 5mm thick.
  • Step 6 Bake for 13 minutes in a pre heated oven at 180 degrees Celsius.
  • Step 7 Allow them to cool as they will be soft when removed from the oven, they will turn crispier as they cool.
  • Step 8 Notes, for chewier cookies, make the cookies thicker and bake for 10 minutes, for crispier cookies, flatten them more.
  • Step 9 As a special treat, service with your favourite ice cream.
